Arroz Caldo

INGREDIENTS
1 c. sweet rice
5 slices of ginger roots
1/2 c. green onion, chopped
1 1/2 lbs. boneless chicken, cubed
Salt to taste
Pepper to taste
2 tbsp. cooking oil
1 med. size onion, chopped
1 clove garlic, minced
7 c. chicken broth

DIRECTIONS
Wash rice – set aside. In 3 quart saucepan – medium high, add cooking oil, then add ginger roots until brown, not too dark. Then add garlic, stir few times, then add onion mix together, then add chicken. Mix until chicken is brown. Add broth, sweet rice, salt and pepper. Let boil. Stir occasionally and until rice is cooked. Shouldn’t be too dry. If too dry, add more broth. Add salt and pepper to taste. Then add green onion. Serve hot.
