Tinapa Fried Rice with Tomato-Cilantro Salsa

Tinapa

INGREDIENTS
1 1/2 Cups of Brown Rice
Olive Oil
1 Tablespoon of Garlic (Chopped)
2 Tinapa (Dried Fish – Tinapa Olive Oil)
1 Egg (Beaten)
1 Tablespoon of Scallion (Chopped)
2 Teaspoon of Soy Sauce
1 Tomato (Chopped)
2 Tablespoon of Cilantro (Chopped)

DIRECTIONS
Heat olive oil in a pan, saute garlic for about 1 minute. Add the flaked tinapa; saute for another 30 seconds. Add the egg, green onions, and brown rice. Stir-fry until well combined. Add soy sauce; continue stirring for another 1 minute.

To make salsa:
In a bowl, mix together tomatoes and cilantro. Transfer rice to a container and top with salsa.
